A couple of different Mac OS and Mac OS X shareware programs are made specifically to concatenate multi-part text files. For Mac OS X, you can use Split&Concat, which is available from Loek Jehee's web site.
For older versions of the Mac operating system, ChunkJoiner is available. You can download it from Fabrizio Oddone's web site.
